Amazing Forgotten Chicken

  • Author: Alexander

Description

This classic “forgotten” chicken dish is a true comfort meal. It’s as easy as layering ingredients in a baking dish, setting it in the oven, and letting the magic happen. With minimal prep, this dish fills your kitchen with a savory aroma as the flavors blend and the chicken and rice turn tender. Perfect for busy days or low-effort cooking!

Ingredients

Scale
  • 4 boneless, skinless chicken breasts
  • 1 can (10.5 oz) cream of chicken soup
  • 1 cup long-grain rice, uncooked
  • 1 packet dry onion soup mix
  • 1 1/2 cups water

Instructions

1️⃣ Preheat the oven: Set your oven to 350°F (175°C).

2️⃣ Layer the rice: In a large, greased baking dish, spread the uncooked rice evenly across the bottom.

3️⃣ Place the chicken: Lay the chicken breasts on top of the rice.

4️⃣ Prepare the soup mixture: In a bowl, combine the cream of chicken soup and water, stirring until smooth. Pour this mixture over the chicken and rice, covering everything evenly.

5️⃣ Season with soup mix: Sprinkle the dry onion soup mix over the top of the dish.

6️⃣ Bake: Cover the dish tightly with foil, then bake in the preheated oven for 1 hour and 30 minutes. Avoid removing the foil during baking to allow the dish to steam.

7️⃣ Serve: Carefully remove from the oven and let sit for a few minutes. Serve hot and enjoy the tender, flavorful chicken with perfectly cooked rice.

Notes

  • Variations: Try substituting with cream of mushroom soup or adding a sprinkle of fresh herbs like parsley before serving.
  • Tip: The foil cover is essential to trap steam and cook the rice thoroughly, so be sure not to skip this step.
