This Easy Taco Soup is a hearty and flavorful dish, packed with seasoned ground beef, beans, corn, and tomatoes. - 1 lb (500g) lean ground beef
- 1 small onion, chopped
- 4–5 cloves garlic, minced
- 4 cups (946ml) beef or chicken broth
- 1 can (15 oz / 432g) corn, drained
- 1 can (15 oz / 425g) black beans, drained and rinsed
- 1 can (15 oz / 425g) chili beans in chili sauce
- 1 can (28 oz / 793g) crushed tomatoes
- 1 can (4 oz / 113g) chopped green chiles
- 1 tablespoon chili powder
- 2 teaspoons cumin
- 1 teaspoon each: dried oregano, onion powder, and garlic powder
- Salt, pepper, and cayenne pepper to taste
Instructions
1️⃣ Stovetop Version:
- In a large Dutch oven or pot, brown the ground beef and chopped onions over medium heat until the meat is no longer pink. Drain excess fat if needed.
- Add the minced garlic and cook for an additional 2 minutes, stirring frequently.
- Stir in the broth, corn, black beans, chili beans, crushed tomatoes, green chiles, chili powder, cumin, oregano, onion powder, garlic powder, salt, pepper, and cayenne (to taste).
- Cover with a lid and simmer on low heat for about 15 minutes, stirring occasionally. For a deeper flavor, you can simmer longer if desired.
- Serve hot with your favorite toppings.
2️⃣ Slow Cooker Version:
- Place raw ground beef directly into the bottom of the slow cooker and break it into small chunks (or brown it in a skillet beforehand if you prefer).
- Add in the onions, garlic, broth, corn, black beans, chili beans, crushed tomatoes, green chiles, chili powder, cumin, oregano, onion powder, garlic powder, salt, pepper, and cayenne.
- Stir everything together, cover with a lid, and cook on high for 4-6 hours or low for 8-10 hours.
- Once done, serve with your favorite toppings.
Notes
- You can make this soup spicier by adding more cayenne or some hot sauce.
- Leftovers freeze well and can be stored for up to 3 months.
