Description

This Easy Taco Soup is a hearty and flavorful dish, packed with seasoned ground beef, beans, corn, and tomatoes. Whether cooked on the stovetop or in a slow cooker, it’s a simple, comforting meal that’s perfect for busy weeknights. Serve with your favorite toppings like sour cream, shredded cheese, tortilla chips, or avocado!


Ingredients

  • 1 lb (500g) lean ground beef
  • 1 small onion, chopped
  • 45 cloves garlic, minced
  • 4 cups (946ml) beef or chicken broth
  • 1 can (15 oz / 432g) corn, drained
  • 1 can (15 oz / 425g) black beans, drained and rinsed
  • 1 can (15 oz / 425g) chili beans in chili sauce
  • 1 can (28 oz / 793g) crushed tomatoes
  • 1 can (4 oz / 113g) chopped green chiles
  • 1 tablespoon chili powder
  • 2 teaspoons cumin
  • 1 teaspoon each: dried oregano, onion powder, and garlic powder
  • Salt, pepper, and cayenne pepper to taste

Instructions

1️⃣ Stovetop Version:

  1. In a large Dutch oven or pot, brown the ground beef and chopped onions over medium heat until the meat is no longer pink. Drain excess fat if needed.
  2. Add the minced garlic and cook for an additional 2 minutes, stirring frequently.
  3. Stir in the broth, corn, black beans, chili beans, crushed tomatoes, green chiles, chili powder, cumin, oregano, onion powder, garlic powder, salt, pepper, and cayenne (to taste).
  4. Cover with a lid and simmer on low heat for about 15 minutes, stirring occasionally. For a deeper flavor, you can simmer longer if desired.
  5. Serve hot with your favorite toppings.

2️⃣ Slow Cooker Version:

  1. Place raw ground beef directly into the bottom of the slow cooker and break it into small chunks (or brown it in a skillet beforehand if you prefer).
  2. Add in the onions, garlic, broth, corn, black beans, chili beans, crushed tomatoes, green chiles, chili powder, cumin, oregano, onion powder, garlic powder, salt, pepper, and cayenne.
  3. Stir everything together, cover with a lid, and cook on high for 4-6 hours or low for 8-10 hours.
  4. Once done, serve with your favorite toppings.

Notes

  • You can make this soup spicier by adding more cayenne or some hot sauce.
  • Leftovers freeze well and can be stored for up to 3 months.
