Description

This English Muffin Breakfast Pizza combines all the breakfast favorites — fluffy scrambled eggs, savory sausage, creamy sawmill gravy, and melted cheddar cheese — on top of toasted English muffin halves. Perfect for a family breakfast or brunch, these mini breakfast pizzas are simple, hearty, and absolutely delicious!

  • 1 package of English muffins, split in half
  • 8 eggs
  • 1 lb breakfast sausage
  • 8 oz mild cheddar cheese, thinly sliced
  • 2 cups milk (for sawmill gravy)
  • 1/4 cup sausage drippings (add butter if needed to make 1/4 cup)
  • 1/4 cup flour (for sawmill gravy)
  • 1/2 teaspoon salt (for sawmill gravy, or to taste)
  • 1/4 teaspoon pepper (for sawmill gravy, or to taste)

Instructions

  • 1️⃣ Cook the Sausage:
    • In a cast iron skillet, cook the breakfast sausage over medium heat until fully browned and cooked through.
    • Remove sausage from the pan and set aside, reserving 1/4 cup of the drippings in the skillet (add butter if you need more fat).

    2️⃣ Make the Sawmill Gravy:

    • To the reserved drippings in the skillet, add the flour. Cook and stir over medium heat for 5-10 minutes, or until the roux starts to turn golden.
    • Gradually add the milk, stirring constantly to avoid lumps. Continue cooking until the gravy thickens, then season with salt and pepper to taste.

    3️⃣ Toast the English Muffins:

    • While the gravy cooks, lightly toast the English muffin halves until golden.

    4️⃣ Scramble the Eggs:

    • In a separate skillet, scramble the eggs over medium heat, adding a small splash of milk if desired for fluffier eggs. Cook until just set.

    5️⃣ Assemble the Breakfast Pizzas:

    • Preheat the oven broiler on high. Place the toasted English muffin halves on a baking sheet.
    • Spread a spoonful of sawmill gravy on each English muffin half. Top with scrambled eggs, a slice of cheddar cheese, and a portion of sausage.

    6️⃣ Broil to Melt the Cheese:

    • Place the baking sheet under the broiler and broil until the cheese is bubbly and melted, about 1-2 minutes.
