  • 4 tablespoons unsalted butter, divided
  • 2 tablespoons minced garlic (about 34 cloves)
  • ½ medium lemon, juiced (about 2 tablespoons)

Instructions

Step 1: Season the Chicken

  1. Start by cutting the boneless, skinless chicken breasts into 1-inch pieces. Pat the chicken dry with a paper towel to remove excess moisture, which helps it brown better.
  2. In a small bowl, mix together ½ teaspoon of dried oregano, ½ teaspoon of dried basil, 2 tablespoons of finely chopped fresh parsley, ½ teaspoon of kosher salt, and ¼ teaspoon of black pepper.
  3. Sprinkle the seasoning mixture evenly over all sides of the chicken pieces. Toss the chicken to ensure each piece is well-coated in the herbs and spices.

Step 2: Cook the Chicken

  1. Heat a large 12-inch skillet over medium heat and add 2 tablespoons of unsalted butter.
  2. Once the butter has melted and begins to foam, tilt the pan slightly to ensure the entire base of the pan is coated with butter.
  3. Carefully place the seasoned chicken pieces into the skillet in an even layer. Make sure not to overcrowd the pan, as this will prevent the chicken from browning properly.

Step 3: Add Garlic and Remaining Butter

  1. Once the chicken is mostly cooked, push it to the side of the pan. Add the remaining 2 tablespoons of unsalted butter to the skillet.
  2. When the butter has melted, add 2 tablespoons of minced garlic. Stir the garlic in the butter and cook for about 1 minute, or until fragrant. Be careful not to burn the garlic, as it can turn bitter.

Step 4: Add Lemon Juice and Finish Cooking

  1. Drizzle the juice of half a medium lemon (about 2 tablespoons) over the chicken and garlic mixture.
