  • 1 pound ground beef
  • 4 tablespoons unsalted butter, divided (1 tablespoon + 3 tablespoons)
  • 1 medium white onion, diced
  • ¾ cup carrots, shredded
  • ¾ cup celery, diced
  • 1 tablespoon Italian seasoning
  • ½ teaspoon oregano
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 3 large russet potatoes, peeled and cut into bite-sized pieces (about 3 cups)
  • 3 cups low-sodium chicken broth
  • ¼ cup all-purpose flour
  • 4 cups sharp cheddar cheese, shredded
  • 1½ cups 2% milk
  • ¼ cup full-fat sour cream

Instructions

1️⃣ Cook the Ground Beef:
In a 12-inch frying pan, cook the ground beef over medium-high heat until fully browned, breaking it up as it cooks. Drain the excess fat and set the beef aside.

2️⃣ Sauté the Vegetables:
In a large 5-quart pot, melt 1 tablespoon of butter over medium-high heat. Add the diced onion, shredded carrots, and diced celery, along with the Italian seasoning, oregano, salt, and black pepper. Sauté for 2-3 minutes until the onions are softened and the vegetables are fragrant.

3️⃣ Add Potatoes and Broth:
Add the cooked ground beef, cubed potatoes, and chicken broth to the pot. Reduce the heat to low, cover with a lid, and simmer for 10-12 minutes, or until the potatoes are tender.

4️⃣ Prepare the Roux:
In a separate small frying pan, melt the remaining 3 tablespoons of butter over medium-high heat. Stir in the flour, cooking for about 2 minutes until it bubbles and forms a roux. Stir the roux into the soup, mixing well to thicken the broth.

5️⃣ Add Cheese:
Gradually stir in the shredded cheddar cheese until it’s fully melted into the soup.

6️⃣ Finish with Milk and Sour Cream:
Add the milk to the soup, bringing it back to a simmer. Stir in the sour cream until fully incorporated. Taste and adjust seasonings if needed.

7️⃣ Serve:
Remove the soup from heat and serve hot, garnished with additional cheese or fresh herbs if desired.

Notes

  • For extra flavor, you can substitute ground beef with ground sausage or ground turkey.
