These delightful Raspberry Cream Cheese Bites are made with puff pastry and filled with a creamy, sweetened cream cheese mixture and raspberry jam. They’re perfect for a quick dessert or a sweet snack, and the flaky puff pastry makes them irresistible.

  • 1 sheet of puff pastry, thawed
  • 1 (8 oz) package of cream cheese, softened
  • 1/4 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 1/2 cup raspberry jam or preserves
  • Fresh raspberries (optional, for garnish)
  • Powdered sugar (optional, for dusting)

Instructions

1️⃣ Preheat oven: Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper.

2️⃣ Prepare the puff pastry: Roll out the thawed puff pastry sheet on a lightly floured surface to smooth out any creases. Cut the pastry into 12 equal squares and place them on the prepared baking sheet.

3️⃣ Make the cream cheese filling: In a medium bowl, beat together the softened cream cheese, granulated sugar, and vanilla extract until smooth and creamy.

4️⃣ Fill the pastry squares: Place a teaspoon of the cream cheese mixture in the center of each puff pastry square. Add about 1/2 teaspoon of raspberry jam on top of the cream cheese mixture.

5️⃣ Fold the pastry: Gently fold the corners of each pastry square toward the center, pressing lightly to seal.

6️⃣ Bake: Bake the pastries in the preheated oven for 15-18 minutes, or until they are golden brown and puffed.

7️⃣ Cool and garnish: Transfer the pastries to a wire rack to cool. If desired, garnish with fresh raspberries and dust with powdered sugar before serving.

  • Jam alternatives: You can easily swap the raspberry jam for another favorite flavor like strawberry or apricot.
  • Puff pastry tips: Make sure the puff pastry is cold when working with it to ensure a better rise during baking.
  • Storage: These bites are best served fresh, but they can be stored in an airtight container for up to 2 days. Reheat in the oven for a few minutes for a crispier texture.
