This roasted cherry tomato sauce is a rich, flavorful condiment that enhances a variety of dishes.   • 6 cups cherry tomatoes
  • 1 tbsp sugar
  • 2 tbsp balsamic vinegar
  • ½ onion, roughly chopped
  • 1 red bell pepper, cut into segments
  • 46 cloves of garlic
  • Olive oil
  • Salt
  • Black pepper

Instructions

  • Preheat the oven to 400°F (200°C).
    • Prepare your baking sheet or casserole dish by lining it with parchment paper or lightly greasing it with olive oil.
  • Prep the Ingredients:
    • Wash the cherry tomatoes, onion, and bell pepper thoroughly.
    • Roughly chop the onion and cut the bell pepper into segments, discarding the seeds and core.
    • Leave the garlic cloves in their skins.
  • Mixing and Seasoning:
    • In a large mixing bowl, combine the cherry tomatoes, chopped onion, and bell pepper segments.
    • Drizzle with olive oil and balsamic vinegar, then sprinkle with sugar, salt, and black pepper.
    • Toss until all the ingredients are evenly coated.
  • Roasting:
    • Spread the seasoned vegetables evenly on the prepared baking sheet, making sure the tomatoes are in a single layer.
    • Nestle the garlic cloves into the mixture.
    • Roast for about 45 minutes, or until the tomatoes have burst and are slightly charred, and the onions and bell pepper are softened and caramelized.
    • Remove from the oven and let cool slightly.
  • Blending:
    • Transfer the roasted vegetables to a blender or food processor.
    • Squeeze the roasted garlic out of their skins and add to the blender.
    • Blend until smooth for a silky sauce, or pulse a few times for a chunkier texture.
    • Taste and adjust seasoning if necessary.
  • Storing:
    • Let the sauce cool completely before transferring it to airtight containers.
    • Store in the refrigerator for up to 5 days or freeze for up to 6 months.
  • Serving Suggestions:
    • Use the sauce with pasta, as a pizza base, or as a dip for bread. It can also be used as a flavorful base for soups and stews.

Notes

  • Tomato Varieties: While cherry tomatoes are ideal for this recipe due to their sweetness and lower water content, other varieties like Roma or heirloom tomatoes can be used. Adjust the roasting time accordingly to avoid overcooking.
